I just gotta say, learning how to make Bechamel Sauce just changed my life. I was looking for a quick recipe to make for dinner but i only had some chicken and pasta, and i wanted something different. Something tasty.
So I came out with something pretty simple: think of pasta covered in a white, creamy sauce ... it can't go wrong
If you want a cheap, quick and easy recipe, keep reading this! I have no measurements of everything but you can eyeball it and it'll work out, its that easy
Also it's my first time writing a recipe in english, i'm sorry if it's weird xD

Ingredients:
- Chicken breast
- Garlic
- Onion
- Salt
- Black pepper
- Milk
- Butter
- Olive oil
- Flour
- Pasta
- Parmesan cheese
- Scallions
- Grab some chicken breast and dice it
- Season it to taste
- I like seasoning mine with salt, lemon pepper, smoked paprika, turmeric and a splash of vinegar
- Stir fry some diced onion and minced garlic with olive oil (i like adding a bit of butter to it as well)
- Add your chicken and stir fry until it's golden
- when it's done, take the chicken out and leave it aside for now.
- On the same pan, add 2 spoonfuls of butter
- Melt it and add some minced garlic, stir fry it for a bit until it's aromatic
- Add 2 spoons of flour (the same spoon you used for the butter) and mix it well. It's going to look like a batter. Cook it for 1:30 to 2 minutes and dont forget to keep mixing it. It should get to a nice golden color. They say you should cook it until it smells like cookies but i have no idea what that means, i never baked cookies LOL
- Now you're going to need a lot of milk. Add it slowly at first, you'll notice it'll quickly look like a cream. Keep adding and mixing non stop. If you have a fouet it's even better to help dissolve the flour lumps. Keep adding milk until it gets to a nice consistency. Don't let it thicken too much, you want a creamy consistency but not too milky, it should cover the pasta well and not look like a soup xD.
- Add salt and black pepper to taste
- If you have parmesan cheese, you can grate some on the sauce too
- Add the chicken back to the sauce and turn off the heat
- Bring water to a boil and add your pasta, follow the package instructions for how long you should boil it so it's al dente. Don't forget to salt your pasta water!!!
- Drain the water
- If the sauce ended up getting too thick while it cooled, you can add more milk and heat it up a bit more until it goes back to the desired consistency
- Add the pasta to the sauce and mix it well
