I thought im gonna share my go to struggle-meal here which is what i often times cook when i dont have a lot of time or energy or both. feel free to comment your own favourite struggle meals however "disgusting" they might seem, it might just save someones day \o/ <-- this is me being excited for your struggle meals

struggling peanut noodles
what you need:
  • pasta (can be any, just whatever you have lying around, i personally always buy tagliatelle which is objectively the best pasta shape)
  • coconut milk - about half a can for one serving (the canned one cause we want a fatty creamy sauce, you could also use cream i guess but id really recommend coconut milk)
  • peanut butter - for half a can of coconut milk i start with 2 big overflowing spoons of PB and then leave it as is or add a little more - just taste inbetween and decide if it got enough of a peanut taste or not (i mean where else should the peanut taste come from...)
  • optional (but really recommend): curry powder/paste, salt, chilli powder
take your pasta and cook it (with salt) until its done, strain it but leave a little of the pasta water in the pot. now with the pasta water and the pasta in the pot add the peanut butter and let it melt a little, add the cocomilk, and the spices you want to add (i really recommend curry powder) taste your creation on the way, and let it cook until its a very thick creamy pasta.

(i can really recommend making this at 4-5 in the morning when you just came home from the clurbbb)

I made Potti's pasta!


Well, I adapted it and used Asian noodles instead of Italian pasta, but he said that's legal.

Here are the ingredients I used, the only one not pictured is the chilli flakes I added (a lot of).

It's delicious and the easiest thing ever to make! I love it.
