Simple Chicken Wings and Soup

If you boil chicken wings in water for about 45 minutes you achieve something interesting:

1. You end up with a very collagen rich broth/stock which is perfect to use to make soups.
2. You end up with tender chicken wings that go crispy skinned in the oven and fall off the bone when cooked a second time.

So, if you like chicken wings and chicken soup, boiling some wings makes preparing both other recipes super easy.

Below is a super simple recipe for chicken and sweetcorn soup.

You will need:
  • 2 corn cobs (fresh is best)
  • A knob of butter
  • The chicken stock
  • Salt and pepper
Optional: A blender. (If you don't have one, you can make a chunky/brothy soup instead)

Method: When you have your broth ready, blend half the corn up in it, combine it with the remaining ingredients including the rest of the corn and heat it until it bubbles. Done! If you want to add shredded meat from the wings you can, but you don't have to... you can cook them as a seperate dish.

Chicken Wings

Cook the chicken wings in the oven, liberally sprinkled with salt. They will crisp up. You can then toss them in whatever sauce or seasoning is your favourite, after cooking, to preserve their crispy deliciousness.
